One of my many food related quirks has to do with how particular I am about bananas. I only eat bananas that are all yellow. If they start to get spotty then the banana flavour is too strong for my tastes. So what happens to the bananas that don’t get eaten when they are perfect for me? Well, they sit on the counter getting more and more skeezy until they are ready for banana bread. Banana bread is a treat. I have tried to make it healthier in the past by using maple syrup, Greek yogurt, rolled oats, etc. in […]
Applesauce, Prune, and Milled Flaxseed Muffins
This recipe was born from my need to help my little boy with his chronic constipation issues. If anyone out there has similar problems with their child, I invite you to add some advice to the comments on ways you helped (or are helping) your child through this. Having a child that doesn’t want to poop is very stressful. Since I have a tendency to over-internalize negative things in my life, I feel that him not pooping is my fault. That somehow I have done something to make him want to take power in his life and this is how […]
Carrot Cake with Honey and Cream Cheese Icing with a Gluten-Free Option
I have been planning on posting a carrot cake recipe for quite some time. I make carrot cakes twice a year, one cake for each of my dogs’ birthdays. Don’t run away from reading this recipe – this is a human cake and I give a small piece to my dogs as a treat. Every time I would pull out the Canadian Living recipe that I used to make I would cringe at the disgusting amount of sugar and oil that the recipe calls for. I just felt that it was all really unnecessary so I was determined to do […]
Breakfast Banana Bread
Two weekends ago I had a pile of bananas in various stages of nastiness sitting on my counter, which can only mean one thing – banana bread. I already have a banana bread recipe on this site but it is really just a modified version of the lovely, sugar loaded, butter-infused loaf that I grew up with. In essence, my regular banana bread is cake which is nice for a treat but I wanted something that I could eat for breakfast and not feel guilty about. I didn’t want loads of sugar but I didn’t want it to taste like […]
Oatmeal and Milled Flaxseed Chocolate Chip Cookies
I know – this is the second recipe in week that has milled flaxseed in it, but I think we could all use a little more fibre in our diet. The double hit of high fibre ingredients in this recipe makes these cookies almost health food. I considered using whole wheat flour instead of all-purpose flour but I probably would have ended up with little dense bricks. Despite the two healthy ingredients, this is still a treat. There is a pretty high chocolate chip to cookie ratio. Feel free to scale back on the chocolate chips. I asked my husband […]
