Honey Mustard and Rosemary Pork Chops

October 24, 2012 By: Christinacomment

This marinade for pork chops is very simple and quick to throw together. You can coat the pork chops with the marinade just before grilling or putting them in the oven but it is even better if you can let them marinade in the fridge for an hour or two. There is a little story behind how I acquired these particular pork chops. I spent my third year of university in Northern Ireland and when I was travelling around with Simon (we’ve been together for ages) I bought Darina Allen’s book Traditional Irish Cooking as a souvenir. I cooked quite a […]

Rosemary and Lemon Grilled Chicken

May 28, 2012 By: Christina2 Comments

This is a simple, moist, flavourful chicken recipe that is great for busy weeknights when marinating chicken breasts are the last thing you are thinking about when you run out the door in the morning. You can marinate the chicken for an hour or so if you have the time, or for 20 minutes while you get a few things done before you start cooking, like change into track pants and get your little one a snack before the hunger meltdown starts. This is really nice served with some simple potatoes cooked in an aluminum foil bag on the grill […]

Almond and Parmesan Crusted Chicken Breast Stuffed with Goat Cheese and Sundried Tomatoes

February 26, 2012 By: Christina3 Comments

This recipe has had a few versions and it has morphed into a gluten-free recipe out of necessity. I used to make this with half parmesan cheese and half seasoned bread crumbs but that would send my husband to the washroom for the better part of a day so I make it with ground almonds now. You can buy ground almonds and I actually recommend that if you want to speed up the process.  Also, the sound that grinding your own almonds makes in the food processor is deafening. I didn’t grind the almonds really finely for this simply because […]

Macaroni and Cheese with Cauliflower and Peas (sauce is Gluten-Free)

February 5, 2012 By: Christinacomment

It has been quite a while since I have had time to sit down and write a blog post. It has been a very busy few months at my house – I started a new job, George has had another health crisis (x2), and Christmas was thrown in there. As for our Georgie; he is doing much better. He had a tumor removed from his bladder and the diagnosis before it was tested was that he only had a couple months to live. Thankfully, the surgeon who did his surgery back in October for the massive lung infection and subsequent […]

Burgers

May 9, 2011 By: Christinacomment

Hamburger topped with Double Gloucester Cheddar and Stilton is hidden within on a multi-grain bun You will notice that I don’t presume to tell you what topping to put on your burger aside from cheese. I loathe lettuce or tomatoes on my burgers so putting up a food stylist type photo with fresh lettuce and tomatoes on a burger does nothing to entice me to try a burger recipe. When I see that I just picture myself picking that stuff off  wearing a pinched expression on my face. Like I did with the pizza dough recipe I just gave you […]
