This is another easy soup recipe that is all brought together by my kitchen buddy, the immersion blender. We had about 4 or 5 butternut squashes sitting in the pantry from our CSA that I was getting worried would go to waste so I decided that soup is the quickest think to do with them. The next question was how was I going to flavour the soup? I’m not a big curry fan, so that option was out for me. Another look in the pantry led me to a whole head of garlic. Well, roasted garlic it is then. The […]
Creamy Parsnip Soup with Tarragon & Pancetta Crisps
Very close to the top of the list of my favourite kitchen gadgets is my immersion blender. I would be very torn if someone told me that I had to give away my immersion blender, food processor or my KitchenAid mixer. Generally I call my immersion blender my stick blender and it has made making pureed soups ridiculously simple. This parsnip soup has a very simple base: leeks and garlic (onion would be a fine substitute for the leeks). When I was trying to think of something that would pair well with the unique flavour of parsnips I went sniffing around my […]
Chipotle Chicken and Corn Chowder with Black Beans
For the most part, I’m not big into spicy food. I don’t go crazy over chicken wings and when we go out for Thai or Vietnamese I stick to the very mild dishes but there is something about the combination of the rich, spicy and smokey flavours of this soup with the sweet bite of corn that keeps me making it again and again, heat and all. This recipe is adapted from a recipe in Cooking Light’s Chicken Tonight cookbook. There are many ingredients that are the same in both recipes but I left out the hominy since it isn’t a […]
Acorn Squash and Kale Soup
The acorn squashes from my lovely CSA this year were so adorably tiny due to the drought in the summer. I used six little bitty squashes in this recipe where I would have normally just used 3 regular sized acorn squashes. Actually, I don’t know for sure that they are acorn squashes but they look close enough and acorn squash is very easy to find in local grocery stores so I’m sticking to calling these acorn squashes. Feel free to peel your acorn squash but the size of mine and the toughness of the skin on the little buggers made […]
Chipotle Sweet Potato Soup with Crème Fraiche
I made this Sunday night in a flurry of inspiration and a desire to use up some things in pantry. This is quite a simple soup recipe with not too much chopping and everything went into one pot. The chipolte chile pepper made this soup pretty spicy which my husband loved. Adding some creme fraiche to the pureed soup mellowed the spiciness slightly but it was still damn hot. If you like things a bit milder, you could use half a chili pepper and still get the smokey heat that chipotle gives. If you aren’t familiar with chipotle chile peppers […]
Kale, Pancetta, and Cheese Tortellini Soup
This is one of my favourite meals to make. It is healthy and pretty balanced. You get lots of kale, which is considered one of the super-foods in terms of nutrients, hearty cheese tortellini, beans for protein and of course pancetta. I hardly ever make a soup that doesn’t start with bacon of some sort. If you can’t find pancetta (or don’t have the inclination to look for it) you can use regular bacon. I get pancetta from the deli counter at the grocery store. I ask for thick slices but if they don’t have it at the counter I […]
