There is a familiar scene for many who work from home or are a stay-at-home-mom like I am. We maybe grabbed a quick lunch while we were working or scavenged off of the lunch that we were preparing for the little ones. Who among us parents haven’t eaten some macaroni and cheese straight out of the pot with a fork when naptime was barreling down on us? We catch ourselves in the middle of the day getting mighty hangry. It is this time of day that we should try to take a few moments to make ourselves a proper snack.
These flatbreads only take a few minutes to prepare with very little clean-up. Sure, the recipe below is for four mini naan flatbreads but you could scale that down if you are the only one home. You could also mix up the apple butter and Dijon mustard spread, use only enough for one or two flatbreads and store the rest in the fridge for later in the week when you feel like you need to take a moment to have a bite to eat in between meals. In my case, this is when there is a rare 20 minute period when someone isn’t whining, crying, needing to be cleaned or held.
The type of apples that I always have in the crisper are Cortland apples. My son favours Honey Crisp apples but they can be pricey so I tend to pick up Cortlands. They bake well in pies and have the tartness that I prefer in an eating apple. I used mini Naan bread rounds that are an option for replacing burger buns and they are with the flatbreads in the bakery section at the grocery store. If you can’t find the little Naan flatbreads then buy whatever Naan bread looks good in your local grocery store. The larger Naan flatbreads are a great size for a proper lunch. If you have the inclination to rustle up a salad to go along with it, you can mark that as a big success in the lunch department even if the rest of the week involved a lot of the aforementioned toddler lunch scavenging.
Oh, and don’t be tempted to put the cheese on before you bake it. The cheese would turn into icky, greasy puddles. The heat from the freshly baked flatbreads is enough to warm the cheese through nicely. Stilton, gorgonzola, or Danish Blue cheese all work well with this recipe. It is just a matter of taste or what you happen to pick up at the store. If blue cheese does not appeal to you, a great substitution is a nice sharp, crumbly cheddar cheese.
Take the time to make yourself a healthy and satisfying snack or lunch. You deserve it. Cut up a second apple for some desk side munching while you are at it. Nobody regrets having a healthy snack to mindlessly munch on while you work away.
Savoury Flatbreads with Apples and Crumbled Blue Cheese
Ingredients
- 1/3 cup apple butter such as Wellesley brand
- 1 1/2 tbsp Dijon mustard
- 4 small Naan flatbreads or 2 medium Naan flatbreads
- 1 Cortland apple thinly sliced or your favourite apple
- 1/4 cup crumbled blue cheese such as Stilton
- *you could use a sharp cheddar cheese in place of Stilton if you aren't fond of blue cheese
Instructions
- Preheat the oven to 400 F.
- Line a cookie sheet with parchment paper and place the naan flatbreads on the pan.
- Mix together the apple butter and Dijon mustard. Spread it as thickly on the flatbreads as you like. About 1 tbsp or so per flatbread works nicely. You will likely have some apple butter mixture left over so you can store it in the fridge for another day.
- Thinly slice the apple and place on the flatbreads.
- Bake the flatbreads for approximately 8 minutes.
- Place the flatbreads on a plate to serve and crumble some blue cheese over each flatbread.
