It sure has been a while since a posted a recipe here. I’ll keep it short and sweet lest I raise the ire of the people who get upset about long form narrative blogs of days gone by. This is absolutely one of my family’s favourite dinners. All the kids love it which is such a relief since making a meal that pleases three kids of varying degrees of pickiness is exhausting. Just a couple notes on the ingredients – pancetta can be a pricey item so feel free to reduce the amount used to stretch it a bit. You […]
Linguine with Prosciutto and Pea Shoots
This is a paid post that has been sponsored by Fresh Wines. They provided me with a lovely case of VQA wine to try and to use in the development of this recipe. When summer finally comes I want to get out on those lovely restaurant patios and order a glass of chilled white wine to accompany some delicious summer menu item. The reality of having three little kids is that this seldom, ahem, I mean never happens. Instead of paying through the nose for a babysitter we sometimes feed the little ones an early dinner and get them into […]
Quinoa with Grilled Veggies
I am very happy to belong to a CSA (Community Supported Agriculture) again this year. This is our third year being CSA members and each year we know that we will be inundated with zucchini and summer squash (the yellow zucchini). I didn’t get time this year to get very creative with the zucchini and a lot of the other veggies we got in our CSA box combined with some sweet peppers from our pathetic little garden. Some people might like this served at room temperature but I serve this hot. The leftovers are one of my favourite lunches to […]
Almond and Parmesan Crusted Chicken Breast Stuffed with Goat Cheese and Sundried Tomatoes
This recipe has had a few versions and it has morphed into a gluten-free recipe out of necessity. I used to make this with half parmesan cheese and half seasoned bread crumbs but that would send my husband to the washroom for the better part of a day so I make it with ground almonds now. You can buy ground almonds and I actually recommend that if you want to speed up the process. Also, the sound that grinding your own almonds makes in the food processor is deafening. I didn’t grind the almonds really finely for this simply because […]
