Tandoori Turkey Thighs with Mushroom & Veggie Skewers

This recipe ended up taking a different turn after I started developing it. I was going to do full on kebabs with vegetables and turkey breasts together on the skewer but after I started doing that I gave up. The turkey breasts that I got from the butcher were enormous!  I switched the recipe to using turkey thighs because each thigh is a perfect portion for one person. Let’s be totally honest though. The real reason I didn’t want to skewer the cut up chunks of turkey breast was pure laziness.

Even though this summer has been one of the coldest in a very long time, I’m Canadian so it doesn’t have to be hot for me to get outside and grill. So put a sweater on and get out there and try out all of these recipes as the last days of summer dwindle away.

    I’m thinking of taking this blog post as inspiration and creating some of my own skewers for dinner tonight. I haven’t had them all summer and regardless of not having a BBQ (not allowed // living in an apt bldg) I think I can still make this work 🙂

      I think skewers work really well in the oven. I always forget to soak the skewers so the oven is actually better for me — less chance of them catching fire :).
